In Tikalo the craft spirit is not altered by the modern oenological technology...

After a meticulous manual selection of the grapes in boxes of 20 kg and after having checked that the fruits are optimally ripe, the grapes are selected once again in the table of reception, from where they are sent for fermentation in stainless steel tanks with a capacity of 20000 litres. There the maceration goes on for 15-20 days

The malolactic fermentation goes off slowly in new barrels. The wine is bottled without filtration or cold treatments. The barrels park at present reaches 650 units. It is expected to achieve 1000 units soon. Every year it is planned to renew 20% of the barrels. 40% of the park is composed of barrels of American oak, around 50% of French oak and around 10% of Russian oak. Kios ages during 10 months in barrels of French and American oak.
